Australian summers are renowned for being HOT. Here is where Home Brewing Aussies face a challenge. There is nothing better than an ice cold beer in the peak of summer, although, how do we keep brewing when the temperature is too hot for yeast? Lets look at the different options available so we can ensure the home brew beer keeps flowing and we can continue to brew beer in summer!
Temperature Controller
A temperature controller allows you to confidently ferment at a set temperature within a refrigerator. The MKII Temperature controller is an absolute ideal device for home brewers looking to control all parts of the heating and cooling in the brewing.

Temperature Cooler Bag
The Temperature Cooler Bag allows you to control your brewing temperature WITHOUT a fridge. The bag will fit a 15/25/30 litre fermenter. A 60 litre will fit in the Fermentation Cooler but will need an external airlock. How to use: simple place ice packs or coolers within the bag and replace as necessary.
Brew Beer in Summer with the Right Yeast
Most lager yeasts ferment between 8 – 15 degrees. Ale yeasts typically ferment between 18 – 24 degrees. Temperature control has a major impact on the flavour of the finished beer. Fermenting above the desired temperature range can produce fruity off flavour, esters and harsh fusel alcohols. However, if your brew is getting up to 25 + degrees it is not all doom and gloom! Mangrove Jack’s M12 Kveik Yeast is a top fermenting yeast, offering fast fermentation and thriving in very high temperatures. As a result, Kveik has an ideal temperature range of 30 – 40 degrees and retains a neutral flavour character with subtle citrus fruit notes.
